Delicious Open-Faced Breakfast Sandwich
We’re sharing a delicious open-faced breakfast sandwich today!
Breakfast is definitely one of our favorite meals. We’re constantly looking for easy, healthy recipes way to start the day.
This delicious open-faced breakfast sandwich is super simple to make.
Given it has several layers, we usually save this treat for the weekend when we can linger over a hot cup of French press coffee or a glass of fresh Florida orange juice.
This breakfast sandwich is hearty enough to keep you satisfied until lunch and is the perfect way to surprise someone with breakfast in bed.
Here’s a look at how to create this delicious open-faced breakfast sandwich…
Breakfast Sandwich Ingredients:
- Sourdough Bread
- Avacado
- Arugula
- Cucumbers
- Tomato
- Hard Boiled Egg
- Salt
- Pepper
- Lime Juice
- Feta Crumbles
Breakfast Sandwich Steps:
First, toast a slice of sourdough bread.
This is really important because there will be multiple layers of veggies and an avocado spread on top of the bread and you don’t want your open-faced breakfast sandwich to get soggy.
While the bread is toasting, use caution and care as the knife will be sharp thinly slice cucumbers, tomatoes, and hard-boiled eggs.
You’ll need enough to cover the entire slice of bread.
Next, place half of an avocado, a pinch of salt, pepper, garlic powder, and a squeeze of lime juice in a small bowl.
Mash ingredients together with a fork.
Spread the avocado mixture onto your piece of toasted sourdough bread.
Next pile arugula on top of the avocado mixture.
Then layer your cucumber slices,
your hard-boiled egg slices,
and your tomato slices.
Finally, top with a pinch of salt and pepper
and crumbled feta.
Serve and Enjoy…
Serve with your favorite breakfast side like bacon, fruit, or hashbrown casserole.

In fact, I have it every year on my birthday weekend and for almost all special occasions too.

This is a fabulous recipe. Sometimes on the weekends, I don’t have time for lunch. So this is a perfect solution – having a larger and healthier breakfast. Plus, I love avocado. Also, in unrelated news, did you hear that brain health depends on what you ate for breakfast? I think of all those times in high school when I skipped breakfast . . . hmmm….
